This is a rich, hearty, fruity walnut flavor cake, with just the right amount of banana taste. This recipe contains 21% fewer calories* and 50% less sugar* than the full-sugar serving version. Makes 16 servings.
Serving Size: one slice (72 g)
1/4c unsalted butter
1/4c canola oil
1/2c Truvía® Brown Sugar Blend
1 3/4c all-purpose flour
2 ½ tsp baking powder
½ tsp salt
2 ½ Tbsp Truvía® Nectar
2 medium ripe banana
1½ tsp Truvía® Nectar
2 Tbsp unsalted butter
Preheat oven to 350 oF.
Spray 10 inch Bundt pan with cooking spray.
In a large mixing bowl, combine butter, oil, water, Truvía® Brown Sugar Blend, flour, baking powder, salt, cinnamon, eggs*, and Truvía® Nectar. Mix 5-8 minutes or until light and fluffy.
In a small bowl, mash bananas.
Chop clean dates into small pieces and add to bananas.
Chop walnuts into fine pieces and add to bananas and dates.
Mix the ingredients in the small bowl, and then stir all into cake mix.
Spoon cake mixture into the prepared Bundt pan, smoothing the top.
Bake 40-50 minutes or until a skewer inserted into the center comes out clean.
Remove from oven, let cake sit in pan for 15minutes, after turn over onto a wire rack. Cool for 10 minutes.
While the cake is cooling, put Truvía® Nectar and butter in a small pan and bring to a boil, stirring until butter is melted.
Add walnuts to pan and take off heat.
Once cake has cooled, pour glaze over the top.
Store unused portion in sealed container.
