Kids love pizza and these mini English Muffin pizzas are a great afternoon snack that provides veggies, whole grains and low-fat dairy.
Makes 2 Mini Pizzas
2 teaspoons olive oil
Diced bell peppers
1 whole wheat English Muffin
2-3 tablespoons marinara sauce
¼ cup part-skim mozzarella cheese, shredded
Preparation:Heat olive oil and saute desired veggies in skillet over medium heat until tender. Toast the English muffin until browned. Spread the marinara sauce over the toasted English muffin and top with veggies and cheese. Broil pizza for about 1 minute until the cheese is melted. Remove from broiler and top with Italian seasonings, as desired.
