Homemade Energy Bars

Energy BarsI’m often asked by friends and athletes how to make a healthy, all-natural energy bar. I’ve been experimenting a bit on this and here’s one recipe that I really like.  Of course, I put a new twist (adding protein powder, try different cereals, add vanilla and/or cinnamon) on the recipe, so create your own variation and tell us about it.

Ingredients:

4 cups granola or blend of your favorite whole grain cereals

1 cup all-natural peanut or almond butter

1/2 cup dark chocolate (50% or more cacao) chips

1/4 cup raw (creamed or spun) honey (Do not use regular liquid honey as the bars won’t set as well.)

Instructions:

Place cereal in large bowl. Heat up raw honey and peanut butter in microwave for 15-20 seconds until the honey turns to liquid and the peanut butter is warm and pourable.  Combine the hot honey, peanut butter, dark chocolate chips and cereal and stir until all ingredients are well combined.

Turn out onto a 13x 9 inch aluminum foil-lined baking pan. Press cereal mixture down firmly into the pan to help the bars set. Place in refrigerator and cut into desired sizes and store in foil or saran wrap to use when working out.  I store the bars in the refrigerator and wrap in saran wrap to use on runs or long bike rides.
