Smart Balance Spreadable Butter

Smart-BalanceThe new Smart Balance Spreadable Butter is one of the heart-healthier new spreads you’ll find on supermarket shelves.

Katherine and I had the opportunity to be among the first RDs to get our hands on the new Smart Balance Spreadable Butters. They come in regular, light and extra virgin olive oil and have significantly less saturated fat compared to traditional butter. For comparison, a Tbsp of butter has 7 grams of heart-stopping sat fats whereas the Smart Balance Spreadable Butters have 2-4 grams sat fat, depending upon the flavor. I also like that the Smart Balance Spreadable Butter is made with real butter and canola oil, plus omega-3s and plant sterols, which help to naturally lower cholesterol. You can even use the products as a 1 for 1 substitution for butter in your favorite recipes.

strawberry-scones

Strawberry Scones with Honey Butter
Ingredients:
For the honey butter spread:
6 tbsp Smart Balance® Spreadable Butter
2 tbsp cup honey
1/8 tsp cinnamon

For the scones:
3/4 cup cold Smart Balance® Fat Free Milk and Omega-3s
1/4 cup sugar
2 tsp vanilla extract
1 Smart Balance® Omega-3 Grade A Natural Large Egg
Smart Balance® Omega Non-Stick Cooking Spray
1 cup all purpose flour
1 cup white whole wheat flour
1 tbsp baking powder
1/2 tsp salt
3 tbsp chilled Smart Balance® Buttery Sticks (must be cold) cut into small pieces
3/4 cup diced strawberries
1 Smart Balance® Omega-3 Grade A Natural Large Egg white, lightly beaten
1 1/2 tbsp sugar

Directions:

For the butter:
In a small blender or food processor, combine Smart Balance® Spreadable Butter, honey and cinnamon and blend until smooth. Transfer to a dish and keep refrigerated.

For the scones:

Preheat oven to 375°. Combine the Smart Balance® Fat Free Milk, sugar, vanilla extract and large egg in a medium bowl, stirring with a whisk. Spray baking sheet with Smart Balance® Omega Non-Stick Cooking Spray.

Combine flours, baking powder and salt in a large bowl, stirring with a whisk. Cut in chilled Smart Balance® Buttery Sticks with a pastry blender, or you could use two knives, until the mixture resembles coarse meal. Gently fold in strawberries. Add milk mixture, stirring just until moist.

Place dough onto a floured surface and knead lightly four times with floured hands. Form dough into a 9-inch circle onto baking sheet, about 3/4” thick. Using a knife, cut dough into 12 wedges all the way through.

Brush egg white over dough and sprinkle evenly with sugar. Bake 18 to 20 minutes.

Serve warm out of the oven with honey butter spread.
