Calories from Game Day snacks add up quickly so we’ve got a couple perfect pasta recipes to try for football fans. Because pasta is a complex carbohydrate with a low glycemic index, it will keeps you satisfied, but not feeling like a NFL lineman.

Pasta Caprese Salad Skewers

We love this twist to caprese salad by adding in pasta and putting it on a skewer. Since pasta has a low glycemic index, it helps keep blood sugar levels stables—so that you and your guests will feel satisfied longer.

Prep Time: 15 min

Total Time: 25 min

¼ Box Rigatoni
20 3-Inch Skewers
3 Tbsp Extra virgin olive oil
7oz Fresh mozzarella balls
½ Pint Cherry Tomatoes
1 Avocado diced
4 Leaves basil
2 Tbsp Balsamic Reduction

  1. Bring a pot of water to a boil & season with salt; cook the pasta 1 minute less than required cooking time2. Drain the pasta and toss with 1 Tbsp of olive oil & place on a sheet tray to cool3. Once the pasta is cool, skewer 1 piece of cheese, 1 cherry tomato, 1 piece of avocado and 1 pasta piece onto the same skewer; Use all the veggies to create 15-20 skewers and set aside4. Drizzle the balsamic over the skewers and top with thinly sliced basil leaves, Enjoy!

pasta chipsPasta Chips with Grilled Spinach and Artichoke Yogurt Dip

Ingredients for 8 people
1 box Farfalle
1 tablespoon extra virgin olive oil
½ cup non-fat Greek yogurt
8 oz. low-fat cream cheese
5 tablespoons Parmigiano Reggiano grated
3 cloves garlic minced
1 teaspoon hot sauce
1 tablespoon fresh lemon juice
1 teaspoon fresh ground pepper
1 lb. fresh spinach
2-14 oz. cans artichokes drained quartered
1/4 cup feta cheese crumbled

Instructions:

1. Preheat outdoor grill (can use a broiler for this recipe in place of a grill)

2. Bring a large pot of water to a boil

3. Cook the pasta according to the directions, drain

4. Toss pasta with ½ tablespoon of olive oil and place on a sheet of foil

5. Place on grill turning pasta often to keep from burning

6. Grill about 8 minutes until crispy

7. In a small bowl toss artichokes in remaining olive oil then place them on grill  (or under the broiler) and char them slightly on both sides making sure not to burn them

8. In a food processor add yogurt, cream cheese, garlic, hot sauce, lemon juice and spinach

9. Pulse until ingredients are well incorporated

10. Add artichoke and pulse a few more times

11. Season with salt and pepper to taste

12. Using a cast iron skillet, spoon yogurt dip into skillet and top with crumbled feta cheese

13. Place on grill and cook over indirect heat for 20-25 minutes until brown and bubbly

14. Serve yogurt dip with the farfalle chips
